Butternut Cream with Maple Syrup

  • Maple syrup – 15ml

  • Butternut Flesh – 400g

  • Onion – 1

  • Poultry broth – 150ml

  • Liquid cream – 2 tsp

  • Olive oil

  • Salt and pepper


    Here are the different steps to follow:

    Step 1: Preparation

    Start by removing the skin from the onion and finely chop it.

    Then, peel the butternut squash, remove the seeds, clean it and cut it into generously sized cubes.

    Step 2: Cooking

    Put a tablespoon of olive oil in a pot and let the onion pieces brown for 5 minutes.

    Then add the maple syrup and continue cooking for 2 to 3 minutes.

    Then add the butternut pieces and pour the chicken stock over them.

    Let everything simmer, covered, for 25 minutes over low heat.

    Once cooking is complete, blend the mixture until smooth.

    Step 3: Dressing

    When serving, garnish each portion with a teaspoon of crème fraîche, according to taste!
