Ingredients

Cake :
  • Maple syrup – 60ml

  • Flour – 250 g

  • Baking powder – 5 g

  • Salt – 1 pinch

  • Eggs – 4

  • Brown sugar – 250 g

  • Icing sugar

Here are the different steps to follow:

Step 1: Preparation

In a small bowl, combine the flour, baking powder and salt.

In another bowl, beat the eggs and maple syrup until slightly thickened. Then add the brown sugar, beating until the mixture thickens.

Mix the two preparations together gradually then, on a baking sheet covered with parchment paper, spread the mixture evenly.

Step 2: Cooking

Bake at 200° until the dough is light brown and firm (≈ 11 minutes).

Sift ≈ 2 tbsp. tablespoons of icing sugar on a cloth then invert the cake on top (removing the paper).

Wrap the cake and towel together and let cool completely on a wire rack.

Step 3: Dressing

In a chilled bowl, whip the cream with the maple syrup until stiff peaks form.

Unroll the cake and spread half of the filling evenly on it then roll it up using a towel.

With the other half of the filling, cover the log completely (top and sides).

You can then put it in the fridge (or freezer if you prefer frozen desserts)!
