Buche de Noel

Ingredients

  • Cake:
  • Maple syrup – 60 ml

  • Flour – 250 g

  • Baking powder – 5 g

  • Salt – 1 pinch

  • Eggs – 4

  • Brown sugar – 250 g

  • Powdered sugar

  • Trim :
  • Whipped cream – 625 g

  • Maple Syrup – 100 ml

Recipe

Here are the different steps to follow:

Step 1: Preparation

In a small bowl, combine flour, baking powder and salt.

In a separate bowl, beat eggs and maple syrup until slightly thickened. Then add the brown sugar, beating until the mixture thickens.

Gradually mix the two preparations together, then spread the mixture evenly on a parchment-lined baking sheet.

Step 2: Cooking

Bake at 200° until light brown and firm (≈ 11 minutes).

Sieve ≈ 2 c. tablespoon powdered sugar on a tea towel, then invert the cake onto it (removing the paper).

Wrap the cake and tea towel together and cool completely on a wire rack.

Step 3: Dressage

In a chilled bowl, whip the cream with the maple syrup until stiff peaks form.

Unroll the cake and spread half the filling evenly over it, then roll it up with the help of a napkin.

Using the other half of the filling, cover the entire log (top and sides).

You can then put it in the fridge (or freezer if you prefer frozen desserts)!
