Here are the different steps to follow:
Step 1: Preparation
Start by removing the skin from the onion and chop finely.
Then peel the butternut squash, remove the seeds, clean and cut into generous-sized cubes.
Step 2: Cooking
Put a tablespoon of olive oil in a pot and brown the onion pieces for 5 minutes.
Add the maple syrup and cook for a further 2-3 minutes.
Then add the butternut pieces and pour the chicken stock over them.
Simmer, covered, for 25 minutes over low heat.
Once cooked, blend the mixture in a blender until smooth.
Step 3: Dressage
Just before serving, garnish each portion with a teaspoon of crème fraîche, to taste!
